Estelle kindly brought along some of her delicious homemade French Olive & Ham Cake for people to enjoy at the barbeque.
Here is the recipe if you'd like to try making it yourself:
Ingredients
- 180g normal flour
- one sachet of baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 large eggs
- 10cl whole milk
- 150g freshly grated Gruyère (Swiss cheese; please don't replace
with Cheddar as it will alter the taste)
- 100g black and 100g green olives, pitted.
- 100g smoked bacon (or if possible, "lardons" which you can find
in Aldi or Lidl)
- 10cl extra virgin olive oil
Preparation
- Preheat oven to 180°C.
- In a bowl, mix the flour and the baking powder and stir to blend.
- In another bowl, using a whisk, slowly whisk the eggs (whole),
together with the milk, and the olive oil. Add the salt and the pepper.
- Slowly whisk the above in the flour mixture, to obtain a
homogeneous consistency. Before pouring it, make sure that the olive
oil does not get separated from the rest of the mixture in Step 3 as
this can happen. Whisk a little before pouring.
- Wash the pitted olives, drain them on paper and cut them into small
pieces (small round bits, around 4 per olive)
- Thinly cut the bacon into small stripes (like lardons, or get
lardons if you can, the taste is much better).
- Add the olives, bacon, and grated Gruyère cheese to the cake mixture.
- Pour into cake mold.
- Place in the center of the oven and bake 50 minutes until firm and
golden. To make sure it is baked just put a knife in and see if you get any part of the mixture sticking on the knife.
- Allow to cool to room temperature.
- Cut into slices.
